Case Study

A leading South African wine and spirits producer was faced with problems in its sherry production process as the yeast veil was not growing anymore above the wine as it should to generate the typical sherry flavors. We have measured the relevant indicators and identified several factors preventing the formation of the veil. We have proposed to reorganize the production facility to benefit from the right range of temperature and hygrometry and to set up a formal production process guideline with specific control at each step, mainly yeast inoculation, alcohol fortification and maturation. The veil started to grow again within a few weeks.
